CHOCOLATE BROWNIE - PUMPKIN with what I had! 🎃🍫 Time for some sweetness to start this short week 🙈💥🧛♀️
The ultimate vegan brownie in my house 🏡 is undoubtedly the best I've ever tasted 💘🙏🏼 it saved my life when I could barely eat anything due to Baltazar's food allergies.
Sometimes I make changes and use mashed banana or apple sauce instead of pumpkin.
It depends on what's available, obviously.
This recipe never fails and is special for when you have little time but a strong craving for something sweet.

2 cups cooked and mashed pumpkin
1 tablespoon baking powder
3/4 cup brown sugar
1/2 cup olive oil (I used mine spiced with 🍊 orange from @olaveoliveoils)
1 teaspoon vanilla extract
3/4 cup flour
1/2 cup cocoa powder (I used unsweetened)

Process the pumpkin with the oil and extract.
In a bowl, mix this paste with the dry ingredients and stir well, integrating all ingredients.
Add nuts and seeds to taste.
Pour into a greased baking dish and bake in a medium oven for 20 to 30 minutes depending on the oven.
When you insert a skewer, it should come out clean, without sticking.
