Tomatoes (And What Tomatoes!!)

I'm fond of this dish, you know?

It was one of those beautiful kitchen moments where you didn't have a plan, just incredibly fine and delicious ingredients. One thing led to another: wonderful tomatoes that arrived as a gift, garlic scapes from my garden, spinach stems I saved from last week, and the marvelous basil-infused olive oil from @olaveoliveoils with a deeply aromatic yet very subtle flavor that allowed the other flavors to still shine through.

In this dish, these flavors were born to be together and love each other until death do them part.

It will always be a mystery to me why these flavors and combinations are so perfect and others aren't... but when I taste it, the question matters very little! Haha, it's incredible, and that's that! 🍅🌿
